Olive stones, also known as olive pits or kernels, are the hard inner part of the olive fruit left over after the extraction of olive oil. They are a by-product of the olive industry and have a high calorific value, making them an excellent biomass fuel source for heat and energy production. Olive stones can be extracted in various steps of the olive oil residue treatment process, for example either from the olive pomace or from the olive cake.

Olive stones are characterized by low ash content, making them a suitable fuel even for residential heating applications with biomass. Besides energy applications, olive stones are also used to produce activated carbon and as a raw material in various industrial processes.
